Cookies and Cream Pie

I made this pie exactly two years ago for the blog, and today I am revamping this recipe with some fresh pictures and the video showing you how to make it.

This Cookies and Cream Pie is made with an Oreo cookie crust, filled with a no-bake filling. Then, we top the pie with some ganache, whipped cream, and some more Oreos.

The first time I made this pie, I used homemade Oreos, however this time I went with store-bought ones!

Cookies and Cream Pie

Oreo Crust

Just to remind you, this can be a no bake Cookies and Cream pie. I like to bake my Oreo crust, though, because it does help the crust to crumble less.

The crust is simply crushed Oreos mixed with melted butter (you could sub melted coconut oil too, if you want).

Either way, after crushing your Oreos and mixing them with melted butter, press the mixture on the bottom and sides of a tart or pie pan. I like those with the removable bottoms like this one.

After pressing your crust down, you can either bake it, or just freeze it for 30 to 40 minutes.

The reason why I like to bake it slightly for about 10 minutes or so, is because it makes the crust crumble less.

This step is not necessary. You can make this a 100% no bake pie, by simply putting the crust in the freezer while you prepare the ingredients for the filling.

Cookies and Cream Filling

The filling is made of: cream cheese, yogurt, white chocolate and some whipped cream! Seriously so easy to put together and out of this world delicious!

And to top off the deliciousness, check out this chocolate ganache pour.

After all is said and done, we top the pie with some whipped cream and more oreo cookies!

Ingredients

Oreo Crust
  • 4 tbsp butter melted (56 grams)
  • 2 1/2 cups oreo crumbs (250 grams)
Cookies and Cream Filling
  • 1 cup white chocolate chips or chopped white chocolate (170 grams)
  • 1/2 cup heavy cream (120 ml)
  • 8 ounces cream cheese softened (226 grams, 1 cup)
  • 1/2 cup powdered sugar (63 grams)
  • 1/2 cup greek yogurt or sour cream (125 grams)
  • 1 tsp vanilla extract
  • 8 oreos chopped finely
Ganache
  • 3 ounces dark or semi-sweet chocolate chopped finely (85 grams, 1/2 cup)
  • 1/4 cup heavy cream (60 ml)
Whipped Cream
  • 1/2 cup heavy cream (120ml)
  • 1/2 tsp vanilla extract

Instructions

Oreo Crust
  • Mix oreo crumbs and melted butter in a bowl.
  • Press the mixture on the bottom and sides of a tart pan with removable bottom.
  • Now, you have two options, you can make this a 100% no bake pie by sticking the crust in the freezer for at least 40 minutes. Or you can pre-heat the oven to 350ºF and bake the crust for about 10 minutes, just to set it. Baking the crust will ensure that it crumbles less when you cut the pie, but it’s not a necessary step.
Cookies and Cream Filling
  • Melt the white chocolate and set aside to cool slightly.
  • Beat the 1/2 cup of heavy cream at high speed until stiff peaks form. Set aside.
  • Beat the cream cheese at medium-high speed for a couple of minutes, until smooth. Add the powdered sugar and beat for a minute.
  • Add the yogurt and mix to combine.
  • Add the vanilla extract, and the melted and cooled white chocolate to the mixture. Mix until combined.
  • Add the whipped cream and chopped Oreos to the mixture and fold until combined.
  • Pour the filling onto the bottom of the prepared crust.
  • Place it in the fridge until set, for 4-6 hours.
Ganache
  • While the pie sets, you can make the ganache. Bring the heavy cream to almost a boil in a small sauce pan or microwave it in a microwave safe bowl for a 30 seconds at a time, until hot.
  • Pour the hot cream over the chocolate. Let it stand for 30 seconds. Stir until the chocolate is melted.
  • Sometimes you might have to stick your bowl in the microwave and microwave it slightly to help the chocolate melt. That’s why it’s important to have the chocolate chopped very finely so it melts easy and evenly. If you do need to place the bowl in the microwave, make sure to do at 10 second intervals and always stir in between.
  • Let the ganache come to room temperature for at least 30 minutes.
  • Pour the ganache over the set filling and place it in the refrigerator for about 30 min.
Whipped Cream
  • Whip the 1/2 cup of heavy cream and vanilla until stiff peaks form. Put it in a piping bag fitted with a tip of your choice. Pipe the whipped cream on top of the set ganache to decorate. Top with some more Oreos if you desire.

Notes

Crust: By not baking the crust, and choosing to place it in the freezer instead, it might make the crust a bit more crumbly, which will still be fine. But if you want a sturdy crust, that won’t crumble as much, make sure to briefly bake it, and then let it cool down before filling it.
White chocolate: Please make sure to use good quality white chocolate, with at least 20% of cocoa butter. Most store bought white chocolate chips aren’t real white chocolate, and don’t contain 20% of cocoa butter. Go for the white chocolate baking bars, or buy some good white chocolate chips online, I use Callebaut, which has 28% cocoa butter.
Cream cheese: Also make sure the cream cheese is full fat.
Yogurt: Go for full fat yogurt, I like to use Greek vanilla bean yogurt. You can also use sour cream.

  1. I was never really into Oreos growing up but something about a homemade Oreo sounds Mmmmm! Mmmm! Good!. And regardless of whether or not I like Oreos, I have always been up for a dessert that celebrates them. Take for example this pie. It looks incredibly dreamy.

I am a secret oreo eater. I hide them in the pantry so the kids can’t find them 😉

    So this is screaming…MAKE ME ….MAKE ME….

Pinning for a time very soon!

Okay, this pie has my name written all over it! I absolutely love Oreos (I’m on a diet though :'( ) and I can’t wait to try this pie. Is it okay if I just cheat on my diet a little bit for this divine pie? I think so! 😀 w

    1. You mean how many servings? Same amount of servings, you may need more crust, or your crust may be more on the thinner side, and might break.

  5. Hello. I would like to make this for Mothers day. Unfortunately, I have to drive 2 1/2 hours to my destination. Do you think I could freeze it after its completed?

I made the oreo pie for my kids and I think it was amazing,

Just a bit of work as many steps and kids in between (and was doing at the same time the no bake pistachio pie for me , which I also highly recommend).
So if you really want to enjoy it start early morning as at 10 p,m my kids ended up asking for the pie I had done, jaja.

I made this a few months ago for a friend’s birthday and it was excellent! It’s not too challenging/time consuming but looks so pretty and tasted amazing. Highly recommend for the Oreo lover in your life! 😊

Looks delicious, but there’s some confusion on the crust. One strop says to bake 4 minutes another step days to bake for 10 minutes.

  9. 1/2 cup of powdered sugar should not weigh the same as a 1/2 of Greek yogurt. I’m guessing the sugar weight is wrong.
