Hello friends! Let’s make some easy Carrot Cake Donuts today! These donuts are baked, only require one bowl for the batter, and one bowl for the glaze. You can get the kids involved and bake together for a fun baking project!

These Carrot Cake Donuts are absolutely fluffy and delicious! They are moist, and easy to make. I made them with my son Luke.

My son is almost 4 years old, and he loves baking with me. We have been baking together since he was old enough to sit up by himself. I would put him on top of the kitchen counter and we would make a mess together.
Well, we still do.
You only need 15 minutes to prepare these donuts. And the baking time can be as low as 10 minutes if you have a large donut pan. I only have one donut pan that fits 6 donuts, so I had to bake in two batches. But if you have 2 pans, or a large pan that fits 12 donuts, you can make the donuts and bake them in less than 30 minutes!
Please wait for them to cool down to put the glaze on top. They cool down pretty quickly though, and you can even eat a fluffy donut fresh out of the oven while you wait, because how can you resist, right?
Start by mixing all of the ingredients in a bowl. I like to measure out the dry ingredients and combine them in a bowl. Then pour the wet ingredients on top, and mix together with the carrots, and raisins.
You don’t have to use any raisins. Initially I was going to make these donuts without raisins, and hadn’t even thought about adding them. And then my son said: How about we add some raisins to the donuts?
Then, of course we did!
Feel free to add nuts, chocolate chips, or any other fun ingredients you have in your pantry.
To make the glaze, it’s very easy. Simply mix the condensed milk with lemon juice. The lemon juice won’t give the glaze a really lemony taste, but it will help the condensed milk set and get thick, providing a nice glaze for our Carrot Cake Donuts.
Then of course we chose to top our donuts with sprinkles. You can leave your plain, or top them with chopped nuts, or anything else that comes to mind.
These Carrot Cake Donuts are a super fun recipe to make, and can be made with ingredients you probably already have at home.
We used Eagle Brand® Sweetened Condensed Milk, because that is a pantry staple for us. It’s my favorite condensed milk, which I am sure you are aware of, if you have been reading my blog posts.
This recipe is perfect for long weekends, or for when you are spending time at home and want to involve the kids in a baking project! Lately we have been baking together a lot, making bread, cookies, and of course donuts.

Glaze

Eagle Brand® Condensed Milk -

Instructions
Carrot Cake Donuts

Pre-heat the oven to 350ºF and grease a donut pan with spray oil.

Mix the Eagle Brand® Condensed Milk, egg, butter, oil, and milk together.

Mix the flour, cinnamon, baking powder, baking soda, and salt together.

Pour the wet ingredients over the dry ingredients, along with the shredded carrots, and raisins if using, and stir until combined.

Pour the batter onto the donut pan and bake for 10 to 12 minutes in the pre-heated oven.
Glaze

Mix the Eagle Brand® Condensed Milk with the lemon juice. Spread on top of the donuts.
Recipe Notes
You will use one full 14 oz. can of Eagle Brand® Condensed Milk for this recipe, half for the donuts, and the other half for the glaze.
The lemon juice in the glaze will help the condensed milk get thick, without giving it too much lemon taste, it will be tangy and delicious!
The raisins are optional, you can also add nuts or other dried fruit if you wish.
