Almond Cake
This Almond Cake is soft, rich, and incredibly moist, with a buttery almond flavor and a slightly gooey center that reminds me of the filling inside an almond croissant. Made with almond flour and ricotta, it’s naturally gluten-free and has an almost custardy tenderness that makes it different from a traditional fluffy cake.
Orange zest brightens up the rich almond flavor, while vanilla and almond extracts add warmth and depth. Finish it simply with powdered sugar and fresh berries, or add an almond glaze for an extra-special dessert.

Why You’ll Love This Almond Cake
This is one of those simple cakes that feels much more elegant than the effort required to make it. I tested this recipe three times before sharing it, and the combination of almond flour and ricotta creates such a wonderful texture.

Key Ingredients & How to Use Them
This Almond Cake uses a relatively short ingredient list, so each ingredient contributes quite a bit to the final flavor and texture.
Almond Flour – This replaces traditional wheat flour and gives the cake its rich almond flavor and incredibly moist texture. For the smoothest crumb, I prefer finely ground blanched almond flour.
Ricotta Cheese – Ricotta adds moisture and richness without making the cake overly heavy. It also helps create the soft, slightly creamy interior that makes this cake so special.
Butter – Adds richness and helps give the cake its tender texture. Make sure the butter is softened before you begin so it creams properly with the sugar.
Sugar – Sweetens the cake while also helping create its soft texture.
Eggs – Provide structure and richness. Add them one at a time so they incorporate evenly into the batter.
Almond Extract – A little almond extract enhances the natural nuttiness of the almond flour.
Orange Zest – Fresh orange zest cuts through the richness and gives the cake a subtle citrus flavor. It pairs particularly well with almonds.

How to Make Almond Cake
One of the best things about this recipe is how straightforward the batter is to prepare. Because we’re using almond flour, there’s also no need to worry about developing too much gluten while mixing.
Start the Batter
Begin by beating the softened butter with an electric mixer for about 30 seconds.
Add the sugar and beat for another minute, until the mixture is well combined.
Add the eggs one at a time, mixing after each addition. Scrape down the sides and bottom of the bowl as needed to make sure everything is evenly incorporated.
Along with the final egg, add the vanilla extract and almond extract. Mix until combined.

Add the Remaining Ingredients
Add the ricotta and fresh orange zest and mix until incorporated.
Finally, add the almond flour and salt. Mix just until you have a smooth, evenly combined batter.

Bake the Cake
Spread the batter on the bottom of a 8-inch pan greased and lined with parchment paper. Use a spatula to smooth out the batter on an even layer. Add the slivered almonds last.
Bake in the oven for 40 to 45 minutes until a toothpick comes out clean when inserted in the cake.

Let the Cake Cool!

How to Serve Almond Cake
This cake doesn’t need much decoration because its rich almond flavor and moist texture really are the stars of the recipe.
My favorite way to serve it is with a generous dusting of powdered sugar. Add some fresh berries on top or alongside each slice for an easy but elegant presentation.
For something more decadent, serve it with freshly whipped cream or a scoop of vanilla ice cream.
You can also make the almond glaze included in the recipe card notes and drizzle it over the cooled cake. The glaze emphasizes the almond flavor and makes the cake feel a little more special for a celebration.
Because the cake is rich without being overly sweet, it’s just as appropriate for brunch or an afternoon coffee as it is for dessert.

Can I Use Almond Meal Instead of Almond Flour?
Yes. Almond flour and almond meal are both made from ground almonds, but there is a slight difference between the two.
Almond flour is typically made from blanched almonds with their skins removed, which gives it a finer texture and lighter color. Almond meal is often made from almonds with their skins still intact.
You can substitute almond meal for the almond flour in this recipe. The finished cake may have a slightly more rustic texture and you’ll see small brown speckles from the almond skins, but it will still work.
For the finest, most delicate cake texture, I recommend finely ground blanched almond flour.
Expert Tips
This is a very forgiving cake, but a few simple details will help you get the best texture every time.
- Use finely ground almond flour. A finer flour produces a smoother, more tender crumb.
- Use softened butter. It should be soft enough to beat easily but not melted.
- Add the eggs individually. This helps them emulsify into the butter mixture rather than separating.
- Scrape the bowl frequently. Ricotta and butter can stick to the bottom and sides of the mixing bowl.
- Use fresh orange zest. Since there are relatively few ingredients, fresh citrus makes a noticeable difference.
- Don’t expect a traditional fluffy cake. Almond flour and ricotta give this cake a rich, dense, very moist texture.
- Allow it to cool before slicing. The cake will continue to set as it cools and will slice much more cleanly.

Variations and Substitutions
The simple almond base makes this cake easy to customize with different fruits, citrus flavors, and toppings. Here are a few variations to try once you’ve made the original.
- Lemon Almond Cake: Replace the orange zest with fresh lemon zest and finish the cake with a lemon glaze.
- Blueberry Almond Cake: Gently fold about ¼ cup of fresh blueberries into the batter before baking.
- Almond Glaze: Skip the powdered sugar and finish the cake with the almond glaze included in the recipe card notes.
- Mascarpone: Replace the ricotta with an equal amount of mascarpone for an even richer cake.
- Fresh berries: Top the finished cake with raspberries, strawberries, or blueberries before serving.
- Sliced almonds: Sprinkle sliced almonds over the batter before baking for additional texture and almond flavor.
For another fruit-and-almond combination, try my Almond Cherry Bars, which pair sweet cherries with rich almond flavor.
I made this recipe three times to make sure it would be perfect before I could share it. And it has exceeded my expectations. This is an absolutely delicious way to use up almond flour and make a tasty cake.

Storage and Freezing
Because this Almond Cake contains ricotta, I recommend storing leftovers in the refrigerator.
Keep the cake covered or in an airtight container in the refrigerator for up to 5 days.
For the best texture, remove the cake from the refrigerator about 20 minutes before serving. Allowing it to lose some of its chill brings back the soft, rich texture of the butter and almond flour.
You can also freeze the cake for up to 2 months. Wrap the cake or individual slices tightly in plastic wrap and place them in an airtight freezer-safe container.
Thaw overnight in the refrigerator or let an individual slice sit at room temperature for about an hour.
Frequently Asked Questions
Yes. This recipe uses almond flour rather than wheat flour, so the cake is naturally gluten-free. If you’re baking for someone with celiac disease or a severe gluten intolerance, make sure all of your individual ingredients are certified gluten-free and haven’t been subject to cross-contamination.
The cake has a rich, buttery and nutty flavor with notes of vanilla, almond, and orange. The flavor and soft, moist texture remind me of the almond filling inside an almond croissant.
Yes. Mascarpone can be substituted for the ricotta. It will produce an especially rich, creamy cake.
Absolutely. In fact, this is a great make-ahead dessert because it stays so moist. Bake it a day before serving and keep it covered in the refrigerator, then bring it closer to room temperature before serving.
Yes. Blueberries are especially good with almond and orange. Add about ¼ cup of fresh blueberries to the batter before baking. Raspberries would also pair beautifully with the almond flavor.

This is absolutely delicious!!My husband loved it . Thank you for sharing your wonderful recipes 😊
I’m so happy to hear that!!
Do you have an idea if I could bake this in a metal tart pan? I thought it would be beautiful to get those wavy edges on the sides. But it wouldn’t have parchment paper around the sides then, just greased.
I think it depending on the pan it can work. And as long as you grease it well. The batter is thick enough that makes me think it could work. I would still place on top of a pan just to make sure if there are any leaks.
Thanks so much for the tips. I just made it today and it’s delicious, with a lovely, soft crumb. Absolutely perfect treat to accompany a cup of tea. I greased the ridges of my pan really well with butter, parchment on the bottom, and it came out of the pan perfectly. I also loved how the raw batter was perfect to work with, not too stiff, sticky, or runny. It was so easy to spread it evenly in the pan with a silicone spatula.
I’ll definitely come back to this recipe again!
This cake is one of the best things I have ever made, and I do a lot of baking! This is an incredibly delicious cake!
I did not try it with lemon zest, I used orange. I highly recommend trying it with orange first, and don’t skip adding zest. It’s worth a trip to the store if you don’t have it on hand. The flavor is out of this world!
Thank you so much for this recipe!
Love your recipes❤️
Thank you so much Maria!!
Second time using this recipe. Used lemon zest this time, cake is so good that had to eat it. I usually don’t eat what I bake.
That’s wonderful to hear!! Thank you so much!!
Can I use all purpose flour instead of almond ? I’ve never used almond flour.
I havent tried this cake with all-purpose flour
Worked out GREAT! Such an easy and satisfying result. I am going to go back and make it with lemon next time!
Sounds wonderful! Thank you!
Can’t wait to make this….looks delicious!
Could I substitute cottage cheese that is run through the blender for the ricotta?
I believe it works like that.
I have a 7″ pan or a 9″ pan. Which would work best?
the best one would be the 9″, the cake will be a bit shorter.
This cake was amazing! So moist and the perfect blend of flavors!
Thank you!
Thank you Shannon!! So glad to hear!!!
Could you use cream cheese instead or would it not work.
I would use something like yogurt instead of cream cheese to substitute for the ricotta.
Hi!
I think the measurement of the almond flour in grams is incorrect, it threw me off while making it. 2.5 cups is not equal to 240 grams, 1 cup is 240 grams. I went ahead with 2.5 cups but you may want to correct it for your metric users.
Thank you,
Demet
Hi there, one cup of almond flour is 96 grams, not 240 grams. Therefore, 2.5 cups is 240 grams. The measurements in the recipe are correct.
Very nice recipe chef 👍👌👏. Delicious 😋. Thank you for your 🌞😎
That would be nicer with jam underneath the slices of almonds, or half way through the sponge
Receita perfeita e deliciosa! Amei!😋😋😋😋👏🏻👏🏻👏🏻👏🏻
