These sugar cookies are a classic favorite.

To make sugar cookies, beat room-temp butter until smooth, about 1 minute. Add sugar and beat for 2 more minutes until light and fluffy.

Incorporate the whole egg, mixing until just combined, and then scrape the sides of the bowl. Follow this by adding the egg yolk and vanilla extract, mixing until fully incorporated.

Add the flour, baking powder, baking soda, and salt to the wet ingredients.

Mix on low speed until just combined.

Bake them in the oven for 10 to 12 minutes, or until the edges are set and slightly golden.

Store any leftover chewy sugar cookies in an airtight container at room temperature for up to 3 to 4 days.

With a tender crumb and a hint of vanilla, each bite melts in your mouth.
