Today I bring to you a recipe for Peanut Butter Matcha Smoothie!

As you might know, this week I am doing a Peanut Butter Week kind of thing.

So far, we’ve had PB&J Cake, Vegan Tofu Tacos with Peanut Sauce, Peanut Butter Cups, Peanut Butter and Chocolate Spread, Vegan Peanut Butter Tarts. Today it’s this Peanut Butter Matcha Smoothie turn.

This one right here was my favorite recipe from the whole Peanut Butter Week.

It’s a super easy one too!

This smoothie really combined the best of both worlds: the peanut butter world and the matcha world.

This Peanut Butter Matcha Smoothie is vegan, guys! I used coconut milk to make it!

You’ve got the creaminess and sweetness provided by the coconut milk and the bananas.

And you can also add maple syrup to it. I usually go for 1-2 tablespoons per layer, but you can leave it out if you want to. Most times when I make matcha smoothie, I don’t add it.

My 2 year old Luke loved the peanut butter part. He tried the matcha one but I didn’t let him have too much of it because of the caffeine. He would have had the whole thing though. And then, would never ever again sleep!

And his sleep is sacred, because it’s when I can get things done around here! Luke is a good toddler. Which means he is very active and curious (translation “likes to climb things”). So, he doesn’t need any matcha.

This recipe makes for a large serving! It’s like two smoothies! It’s perfect for sharing. Or not! When I make this, it counts as a meal to me. It’s so filling and delicious! It will leave you satisfied and happy! And probably a little extra happy and energized because of the caffeine in the matcha! Win, win, win!

I like smoothies so much. This Peanut Butter Matcha smoothie is my favorite at the moment! But I really just make tones of smoothies, specially during the summer.

I keep a couple bananas always frozen in zip loc bags in my freezer.

To do this, simply peel a few bananas and place them in a plate or baking sheet. Put them in the freezer for a couple hours. When they are frozen solid, you may put them in a ziplock bag, this way they won’t freeze together.

So, anytime the desire to make a smoothie strikes, I’m ready to go! Just grab a frozen banana and go to town.

I decided to top this smoothie with toasted coconut! And that’s my favorite bit of the smoothie: the crunchy pieces of coconut, mixed with the sweet and creamy layers.

The cooking grade matcha is perfect for macarons, pies, cookies, smoothies (like this one), etc!

Ingredients
  

Peanut Butter layer
  • 1/4 cup coconut milk (or any other dairy-free milk)
  • 1 1/2 frozen banana
  • 1/2 cup peanut butter
  • 1-2 tablespoons maple syrup or more to taste
Matcha layer
  • 1/4 cup coconut milk (or any other dairy-free milk)
  • 1 1/2 frozen banana
  • 2 teaspoons matcha powder
  • 1-2 tablespoons maple syrup or more to taste

Notes

To freeze bananas, all you have to do is peel them and put them in the freezer for a couple hours. You can leave some bananas already frozen in your freezer for when the desire to make smoothies strike.
