Spinach Puffs

Savory spinach puffs with creamy spinach, bacon, and parmesan in flaky puff pastry.

Thaw puff pastry before starting, or make the filling ahead and assemble later.

Mix softened cream cheese, egg, salt, and pepper, and add garlic powder or thyme for extra flavor if desired.

Add the parmesan cheese. Using a fork or small whisk, mix everything together thoroughly until the mixture is smooth and creamy.

Cook bacon in a skillet over medium heat until crispy, 9–11 minutes, flipping halfway. Drain, then crumble or chop.

Leave 1/2 tablespoon bacon fat in the pan, cook garlic until golden, then add spinach until wilted. Stir in bacon, season with salt, and let cool.

Bake in the preheated oven for about 25 minutes, or until the puffs are golden brown. Let them cool in the pan for about 10 minutes before serving.
