This blackberry mojito is a twist on the classic mojito. It's light, refreshing, and perfectly balanced. Fresh blackberries, lime, and mint keep it bright and clean, while simple syrup and white rum bring everything together without overpowering the drink.

Instructions
Add the lime juice, blackberries, and mint leaves to a bowl, jar, or cocktail shaker. Gently muddle just until the berries release their juice and the mint becomes fragrant.
Add the simple syrup, white rum, and a handful of ice. Shake or stir until well chilled. I prefer mine shaken.
Taste the mixture after adding the rum but before pouring over ice, and adjust sweetness if needed.
Strain into glasses filled with ice, or leave the mixture unstrained for a more rustic drink.
Top with club soda, garnish with extra blackberries and mint, and serve immediately.

Simple syrup: To make it, combine equal parts sugar and water in a small saucepan, bring to a boil just until the sugar dissolves, then turn off the heat and let it cool.
