Strawberry Cake

This Strawberry Cake is fantastic, and bursting with strawberry flavor!

Start by blending strawberries into a puree, then cook the puree in a saucepan over medium heat.

Mix dry and wet ingredients, then add 1/2 cup cooled strawberry puree. Stir to combine, and add a few drops of red or pink food coloring if desired.

Divide batter into three greased, parchment-lined 8-inch pans. Bake at 350°F for about 35 minutes, until a toothpick comes out clean.

Cook strawberries, lemon juice, and sugar in a saucepan over medium-low heat until thickened. Transfer to a bowl and cool completely.

To make the Strawberry Frosting you'll need butter, cream cheese, powdered sugar and the Strawberry Puree.

When assembling the cake, put in-between layers the Frosting and the Jam. Put strawberries on top, also.

Layers of real strawberry cake, filled with jam, and frosted with strawberry cream cheese frosting.
