Brownie Cookies

Cook the butter for a few minutes, and wait until it turns a deep golden, with brown speckles all over. Immediately add the chocolate. Stir until the chocolate has melted.

Whisk the eggs with the sugar for a good 5 minutes. Use a mix of brown and granulated sugar. Add the vanilla and the melted chocolate mixture to the bowl.

Add the flour, cocoa powder, baking powder, and salt, and mix until barely incorporated. Add the chocolate chips and finish mixing. Chill the dough in the fridge for 30 minutes.

You can make the dough for the chocolate brownie cookies the night before. Store it in the fridge, covered with plastic wrap.

Scoop the refrigerated cookie dough into the baking sheets, scatter a few chocolate chips, or pieces of chopped chocolate on top of the cookies. Bake for 10 to 12 minutes.

As soon as they come out of the oven, use a cookie cutter to make the cookies round by placing the cookie cutter around the cookie, and moving it in a circle motion
