Add the strawberries, mint leaves, and simple syrup to a sturdy glass, jar, or cocktail shaker. Gently muddle just until the strawberries release their juice and the mint becomes fragrant. Avoid over-muddling the mint.
Add the white rum, fresh lime juice, and a handful of ice.
Shake briefly until chilled, or stir well if you prefer a slightly less diluted drink.
Taste the mixture after adding the rum and before pouring over ice, then adjust sweetness or lime as needed.
Strain into a tall glass filled with fresh ice, or pour everything in for a more rustic drink.
Top with club soda, stir gently, garnish with mint and a sliced strawberry, and serve immediatel
Notes
Strawberries: Ripe strawberries make a big difference. If they’re bland or underripe, you may need a touch more simple syrup.Mint: Press gently, don’t crush. The mint should smell bright, not grassy.Lime juice: If the drink tastes flat, it usually needs more lime, not more sugar.Shaken vs. stirred: Shaking chills the drink quickly and adds a bit more dilution. Stirring keeps it cleaner and slightly stronger — both work.Frozen strawberries: You can use frozen strawberries if needed. Let them thaw first; the flavor will be slightly softer and the color a bit deeper.Frozen: Blend everything except the club soda with ice, then finish with a splash of soda.Mocktail: Skip the rum and add extra club soda with a splash of strawberry purée.Spicy: Muddle a thin slice of jalapeño with the strawberries for a subtle kick.
