Baked Oatmeal Cups filled with Chocolate

These Baked Oatmeal Cups are chewy and soft, with a creamy Chocolate Filling made with Eagle Brand® Sweetened Condensed Milk. They are easy to make and can be fun to make with the kids!

Ingredients

Cookie Dough

  • 1 cup melted butter
  • 2 cups brown sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 3 cups quick-cooking rolled oats

Chocolate Filling

  • 1 14 oz. can Eagle Brand® Sweetened Condensed Milk
  • 1 cup chocolate chips
  • 1 tbsp unsalted butter

Instructions

  1. Pre-heat the oven to 350ºF.
  2. Grease a cupcake pan.
  3. For the cookie dough, mix all the ingredients together in a bowl. Set aside.
  4. Add the Eagle Brand® Sweetened Condensed Milk, the chocolate, and the butter to a bowl. Microwave for 45 seconds. Stir with a spoon to combine.
  5. Add 2 tablespoons of the dough to the bottom of the cupcake pan and press it down.
  6. Add 1 tablespoon of the chocolate filling on top of the dough.
  7. Top with another tablespoon of dough. You can sprinkle it on top, to give it a crumble look, or press it gently with your hands to form a smooth lid.
  8. Bake for 20 minutes, until the cups are golden brown.
  9. Let it cool for a few minutes and enjoy.

Storage

  1. Store the Oatmeal Cups in an air tight container for up to 3 days.

Recipe Notes

Feel free to add chopped nuts to the cookie dough, about 1/4 cup of your favorite nuts.
