White Chocolate Peanut Butter Cookies

Ingredients

  • 1/2 cup unsalted butter softened (113 grams, 4 oz)
  • 1 cup peanut butter 240 grams, 8.4 oz
  • 1/2 cup brown sugar 100 grams, 3.5 oz
  • 1/2 cup granulated sugar 100 grams, 3.5 oz
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour 127 grams, 4.5 oz
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup white chocolate chips 170 grams, 6 oz

Instructions

  1. Place the butter in the bowl of a mixer. Cream for 1 minute on medium high.
  2. Add peanut butter. Cream for another minute.
  3. Add brown sugar and granulated sugar. Cream for another minute.
  4. Add egg and vanilla and mix until combined.
  5. Add flour, baking powder, baking soda, and salt, and stir on low until incorporated.
  6. Finally add chocolate chips and mix to combine.
  7. Scoop cookies and roll them between your hands to form smooth balls if you wish to. You can simply scoop the cookies onto a baking sheet lined with parchment paper or silicone mat instead of rolling them.
  8. Place the cookies in the freezer for 15 minutes while you pre-heat the oven to 350ºF.
  9. You can either bake all the cookies, by placing them spaced out, 3 inches apart in a baking sheet lined with parchment or baking mat, or bake just a few, and transfer the solid frozen cookies to a ziplock bag to bake at a later time.
  10. Bake the cookies in the pre-heated oven for 8-10 minutes, until lightly golden on top.
  11. Let them cool for 5 minutes.

Storage

  1. The unbaked cookies will last for up to 2 months in the freezer, in a ziplock bag or air tight container.
  2. Baked cookies will stay fresh for up to 2 days at room temperature in an air tight container.

Recipe Notes

You can add peanut butter chips, or even chocolate chips to this recipe if you want to.

Also feel free to add any chopped nuts such as macadamia, add up to 1/2 cup of add-ons.

You can use crunchy or smooth peanut butter, your preference.
