2tspolive oil or butter
1garlic cloveminced (optional, for added flavor)
1cuplong-grain white ricebasmati, or jasmine rice
2cupshot wateror chicken/vegetable broth for more flavor
½tspsaltor to taste
½cupchopped cilantro leaves
1tbspfresh lime juiceabout 1/2 lime
¼tspcuminoptional, for depth of flavor
Instructions
Wash, rinse, and drain the rice well.
In a medium saucepan, heat the olive oil or butter over medium heat. Add garlic and cook for about 30 seconds, until fragrant. Add the rice and cook for 1 minute, stirring frequently.
Add the hot water (or broth) and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed.
Remove from heat and let the rice sit, covered, for 5 minutes.
Add the cilantro, lime juice, and cumin if using to the bowl, and gently toss to combine., and fluffy with a fork. Taste and adjust seasoning with more salt or lime juice, if needed.
Serve warm as a side dish or as a base for burrito bowls or other meals.

Brown Rice Option: Substitute white rice with brown rice.
