A vibrant and customizable Chicken Burrito Bowl packed with seasoned chicken, cilantro-lime rice, fresh salsa, black beans, and a creamy cilantro-lime sauce—perfect for a wholesome, flavorful meal!
Mix all the spices together in a small bowl. Set aside.
Chicken
Slice the chicken into strips.
Heat a skillet over medium-high heat and add the olive oil.
Add the garlic and cook until fragrant.
Add the chicken, salt, and pepper. Cook the chicken for 4-5 minutes on each side or until fully cooked and golden brown.
Add the lime juice and stir.
Add ½-1 tbsp taco seasoning in and stir to coat. Cook for another minute.
Remove the chicken from the heat.
Beans
Drain and rinse the beans.
Add 1 tsp of olive oil to a small saucepan. Add 1 minced clove of garlic and cook until fragrant over medium heat.
Add the beans, salt, and chili powder. Stir with the garlic and olive oil and cook just until heated through, around 2 minutes. Add additional seasonings such as garlic powder, onion powder, black pepper.
Salsa
Mix all the ingredients together in a bowl. Set aside.
Cilantro Lime Sauce
Place all ingredients in a small food processor and process until mixed. You can also whisk them in a bowl if you don’t want to use the blender.
Cilantro Lime Sauce
In a blender add all of the ingredients for the sauce. Blend until smooth.
Assembling the Burrito Bowls
In each bowl, add a base layer of cilantro-lime rice.
Top with chicken, black beans, corn, salsa, avocado.
Top with the cilantro lime sauce.
Garnish with fresh cilantro leaves and a squeeze of lime juice.
Serve immediately and enjoy your fresh, flavorful chicken burrito bowl!
