Strawberry Crunch Cake

This Strawberry Crunch Cake is a delightful blend of fresh strawberries and cream cheese frosting.

First of all, make the Strawberry Crunch Topping. Process Golden Oreo cookies until crumbs form. Add  crushed freeze-dried strawberries and mix to combine. Also, add melted unsalted butter.

Now, let's prep the strawberries! Chop the fresh strawberries into small cubes and add all-purpose flour.

To make the cake batter, whisk together the dry ingredients, then combine the wet mixture as well. Don't forget to scrape the bowl in-between mixing!

To assemble the cake, spread the batter on the bottom of the pan. Sprinkle the strawberry crunch mixture on top. Top with the chopped strawberries.

To make the Cream Cheese Frosting, beat the cream cheese and unsalted butter together. Add the powdered sugar and mix on low.

Spread the cream cheese frosting on top of the cooled cake with a spatula. Sprinkle the remaining homemade strawberry crunch mixture on top. Enjoy!
