Chocolate Mousse Cake

This Chocolate Mousse Cake is the ultimate indulgence for any chocolate lover.

In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder (if using).

In another bowl, mix eggs, oil, buttermilk, sour cream, and vanilla until smooth. Add to dry ingredients, then whisk in brewed coffee until batter is smooth.

Now, fold the whipped cream into the chocolate mixture in two parts. Then fold in the egg whites in two parts.

Place one cake layer in the pan with acetate around the edges. Pour the mousse over it, then add the second cake layer on top. Refrigerate for at least 8 hours or overnight to set.

Combine chopped dark and milk chocolate in a bowl. Heat cream and corn syrup until steaming, pour over chocolate, let sit 1 minute, then whisk until smooth. Let ganache thicken at room temperature for about an hour.

Carefully remove the pastry ring and acetate from the cake. Spread the ganache over the top and sides. Garnish with fresh berries and chocolate shavings for a beautiful finish.
