Vegan Caramel Rice Krispie Treat Bars

  • 1 cup roasted walnuts
  • 1 1/2 cups oats
  • 1/2 tablespoon flax seed
  • 1 tablespoon cocoa powder
  • 3 tablespoons maple syrup
  • 2 tablespoons coconut oil
  • 14 dates


  • 3/4 cup maple syrup
  • 3/4 cup coconut butter
  • 6 tablespoons cashew butter or almond butter
  • 1 teaspoon vanilla extract

Rice Krispie Treats

  • 1/3 cup nut butter I used cashew
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 4 cups brown rice crisp cereal


  • 3/4 cup chocolate chips or chopped chocolate (170 grams, 6 oz)
  • 2/3 cup coconut cream 150 grams, 5.3 oz



  1. Process all ingredients in the food processor until completely incorporated. Press crust onto the bottom of a 8x8” pan lined with parchment paper.
  2. Place it in the fridge.


  1. Combine all ingredients in a small saucepan. Bring mixture to a boil and simmer quickly until thickened and complete incorporated.

Rice Krispie Treats

  1. Whisk nut butter with maple syrup and vanilla extract in a large bowl. If the nut butter is too solid and hardened, you may microwave the mixture for a few seconds to heat it up and make it easier to incorporate.
  2. Add brown rice crisp cereal to the bowl. Mix with a spatula until combined.


  1. Heat up the coconut cream in the microwave or in a small saucepan until very hot. Pour over chocolate chips. Stir with a spatula until completely smooth. If you still see pieces of chocolate in the ganache, simply place bowl in the microwave for a few seconds at a time until chocolate has melted completely. Remember not to overheat your chocolate.

To assemble

  1. Spread a thin layer of caramel sauce on top of the crust.
  2. Press half of the rice krispie treat mixture on top.
  3. Use wax paper to help you manage the sticky rice krispie treats and press them down packed.
  4. Pour the remaining caramel over.
  5. Now press the other half of the rice krispie treat mixture on top of caramel.
  6. Pour ganache over rice krispie treats. Ganache should be at room temperature when you do this, neither warm, or cold.
  7. Let Rice Krispies rest in the fridge for a couple of hours before serving.


  1. The treats will store well in the fridge in an airtight container for up to 4 days.

Recipe Notes

*Note, you may want to save some caramel from the filling part, or make extra to drizzle over chilled bars, once the ganache has set.
