1/2cupbutterunsalted (113 grams)
1/2cupbrown sugar100 grams
1egg
1/2cuprolled oats40 grams
1cupall-purpose flour127 grams
1/2tspbaking powder
1/4tspsalt
2/3cupshredded coconut57 grams
1/3cupmini white chocolate chips56 grams (or chopped white chocolate)
Lime Frosting
1/4cupcream cheese56 grams
2tbspunsalted butter28 grams
1 1/2cuppowdered sugar187 grams
1tbsplime zest
1tbsplime juice
One drop green food coloring
To decorate
1/4cupwhite chocolate chipsor chopped (42 grams)

Instructions
Coconut Bars
Pre-heat the oven to 350 Fahrenheit.
Line a 8x8 baking tray with parchment paper and spray with oil. Set aside.
Beat the butter with an electric mixer for 1 minute until creamy. Add the brown sugar, beat for another minute.
Add the egg and beat until incorporated.
Add the oats, flour, baking powder, salt, coconut, mix until combined.
Add the chocolate chips and mix.
Pour the batter in the prepared pan. Spread it around in an even layer.
Bake in the pre-heated oven for about 30 minutes, until golden on top and around the edges, and if you touch the top it shouldn’t feel too soft or like it’s wet underneath. It should feel somewhat firm, and your finger shouldn’t leave a dent on the bar.
Remove and let it cool down completely.
Lime Frosting
Beat the cream cheese and butter together for 2 minutes until creamy. Add the powdered sugar, lime juice, zest, and food coloring. Mix until incorporated. The frosting should be soft and smooth.
Spread on top of the cooled baked bars.
Place it in the fridge. Once cooled down, melt the chocolate in the microwave then place it in a piping bag, or use a spoon to drizzle it on top of the frosted bar. Sprinkle coconut on top.
Slice and serve.
It’s always best to let them sit at room temperature for 10 minutes before eating, so they have a chance to soften up.
