Pumpkin pasties are easy to make and delicious! These Harry Potter pumpkin pasties are the ultimate fall pastry dessert.

Pumpkin Pasties
2pie crusts
3ozcream cheesesoftened
1/2cuppumpkin puree
1/2cupbrown sugar
2tsppumpkin spice
1eggbeaten for egg wash
Cinnamon Sugar
2tbspsugar
1/4tspcinnamon powder
Instructions
Pumpkin Pasties
Pre heat the oven to 350ºF.
Roll out one pie crust at a time.
Cut out circles or any other shape. I used a pumpkin cookie cutter for the pumpkin shaped pasties, and a rectangle cutter for the mummy pastries.
Cut as many as possible. Then gather the leftover dough and roll that out again, cutting out more shapes as you can.
Using a mixer, beat the cream cheese until creamy and smooth.
Add the pumpkin puree, brown sugar, and pumpkin spice, and mix.
Spoon a bit of the pumpkin filling in the center of each pastry.
Top with another pastry. If making a round shape, you can also fold it onto itself like an empanada.
Brush the edges of the pastry with some of the egg. Crimp the edges of the pastry with a fork, or you can just press it to seal.
I also cut some slits on top of pumpkin shape, to allow steam to escape.
To make the mummies
For the mummies, I cut strips of dough and then after placing some filling on top of a rectangle, I placed the strips of dough on top of it across the rectangle, to resemble a mummy.
Brush the tops of the pastries with the egg wash, and top with turbinado or raw sugar if desired.
Cinnamon Sugar
You can also make a mixture of sugar and cinnamon to sprinkle on top of the pastries.
Mix 2 tbsp sugar and 1/4 tsp of cinnamon and sprinkle on top of the pastries after brushing with the egg wash.
To bake
Bake the pastries for 25 minutes. Let them cool down completely.
Sprinkle powdered sugar on top of the cooled pastries if desired.
