Oreo Cupcakes - Cookies and Cream Cupcakes

These Oreo Cupcakes are pure LOVE. Chocolate Cupcakes, topped with Cookies and Cream Frosting, and a homemade Oreo cookie.

Ingredients

Chocolate Cupcake

  • 1 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt
  • 1 cup brewed coffee
  • 1 tablespoon white vinegar
  • 2 teaspoons vanilla extract
  • 1/2 cup canola oil

Cookies and Cream frosting

  • 6 ounces white chocolate chopped
  • 8 ounces cream cheese softened
  • 4 ounces butter unsalted and softened
  • 5 cups confectioners sugar sifted
  • 2 teaspoons vanilla
  • 1/4 cup chocolate cookie crumbs

Instructions

Chocolate Cupcake

  1. Pre-heat oven to 350F. Line a 12-cupcake pan with cupcake liners or grease it with butter and flour.
  2. Sift flour, cocoa powder, sugar, baking soda, baking powder, and salt together in a large bowl.
  3. In another bowl, mix coffee, vinegar, vanilla and oil. Pour wet mixture over dry. Whisk briefly, until incorporated. Be careful not to overmix. As soon as you see no more streaks of dry mixture, stop whisking.
  4. Distribute batter evenly in cupcake pan. Bake for 15-20 minutes.
  5. Remove and let it cool.

Cookies and Cream frosting

  1. Pour white chocolate into a microwave safe bowl. Microwave white chocolate in 30 second intervals, until melted. Stir until it’s completely melted. Set aside to cool slightly.
  2. In the bowl of a mixer, start creaming cream cheese and butter together, by beating for a couple of minutes on medium speed.
  3. Once cream cheese and butter are fluffy, add melted white chocolate and keep creaming on medium speed until incorporated.
  4. Add confectioners sugar and mix on low speed until incorporated. Raise speed to medium, add vanilla, cookie crumbs, and mix until incorporated.
  5. Put filling in a piping bag fitted with tip of choice to pipe on your cupcakes.
  6. Pipe frosting over cupcakes and top with an Oreo cookie.
  7. You can make homemade or use store-bought.
  8. Cupcakes will keep for a few days in the fridge. Though it will all probably be gone before that!
