Homemade Pumpkin Pasties

I used a pumpkin shaped cookie cutter to cut out pie dough

You can cut any shape you want, even just circles

Pro tip: cut slits on the dough that's going on top, to release steam while the pastry bakes

Fill one side with the super easy to make pumpkin cheesecake filling

Brush the edges of the bottom pastry lightly with egg wash

Top with the other dough piece. You can press the edges to seal it well, or crimp with a fork

Brush the top with egg and top with sugar before baking

The pumpkin filling only takes a few ingredients: cream cheese, pumpkin puree, brown sugar, and pumpkin spice

The results: a light, flaky, and delightful pastry

Serve with a dusting of powdered sugar on top
