Pão de Queijo Recipe

PIES AND TACOS

Pão de Queijo Recipe: Brazilian Cheese Bread.

Traditional pão de queijo uses queijo meia cura, a semi-aged Brazilian cheese. Since it's hard to find abroad, I like using a mix of cotija and parmesan.

Start by heating milk, vegetable oil, and salt together in a saucepan until just simmering.

Pour the hot liquid over the tapioca flour to gelatinize it—this creates pão de queijo’s signature chew. Once slightly cooled, mix in the eggs and cheeses.

Roll dough into golf-sized balls, place on lined baking sheets, and bake at 375°F for 20–25 minutes until puffed and golden.

Check out these variations: mozzarella and provolone for a mild, melty version; cheddar sparingly for a richer flavor; herbs like oregano or thyme for an extra savory touch.

Enjoy warm for the best soft, cheesy texture.

This pão de queijo recipe always delivers that nostalgic, soul-hugging feeling.
