Mascarpone Puff Pastry

This puff pastry recipe is easy to make and outstanding

Start by cutting out the thawed puff pastry, brush it with egg wash, and bake

To make the mascarpone filling, whip heavy cream with powdered sugar, add lemon zest, vanilla, and the mascarpone

Once the pastry has been baked and cooled down, fill it with the mascarpone cream

Essentially, you can fill these pastries with any fillings of your choice. I also chose to top them with lemon curd

These mascarpone puff pastries are best served on the same day, but will keep well in the fridge for a few days
