Lemon Blueberry Bread

Firstly, mix the flour, cornstarch, baking powder, and salt together. The cornstarch helps keep the cake fluffy.

Now make the lemon sugar. Rub the lemon zest and sugar together. Add the butter and olive oil. Beat until fluffy. Add the eggs, one at a time. Add the sour cream, or yogurt to the bowl and mix to combine.

Let the bread cool down for 20 minutes in the loaf pan. Then lift the parchment paper and set the bread on a wire rack or plate to finish cooling.

To make the Lemon Cream Cheese Glaze, beat the cream cheese and butter together. Add the powdered sugar, and lemon juice, mix to combine.
