Hot Chocolate Cupcakes

These were outstanding cupcakes. I can’t even begin to explain to you how much I loved these Hot Chocolate Cupcakes.


– all-purpose flour – unsweetened cocoa powder  – granulated sugar  – espresso powder – baking soda – baking powder – fine sea salt – 1 cup brewed coffee

Chocolate Cupcake: Pre-heat oven to 350F. Sift flour, cocoa powder, sugar, baking soda, baking powder, espresso powder, and salt together in a large bowl.


In another bowl, mix coffee, vinegar, vanilla and oil. Pour dry mixture over wet ingredients. Distribute batter evenly in cupcake pans.


Bake for 15-20 minutes. Remove and let it cool.


Fudge Sauce: Mix all ingredients except for the chopped chocolate, and vanilla in a small saucepan. Bring it to a boil.


Simmer on low for 5 minutes, stirring constantly. Remove form the heat, add chocolate and stir until melted together. Add vanilla.
