Ladyfingers Recipe

You only need a handful of ingredients to make homemade ladyfingers.

Start by whipping the egg whites until stiff peaks with a portion of the sugar.

Whip the yolks with sugar until ribbon stage.

Add the flour, the cornstarch, vanilla, to the bowl along with 1/3 cup of the whipped whites.

Add the rest of the egg whites and fold gently.

The batter should be very light and fluffy.

Pipe the batter in the pan. A round piping tip or just snapping the end of the piping bag will work.

If you don't have an eclair pan, you can just do it on the parchment paper. Using lines to guide will help keep them the same length.

Sprinkle powdered sugar or crystal sugar on top before baking.

Bake them for about 10 minutes.
