Chocolate Coconut Cake

This isn’t an average Chocolate Coconut Cake recipe. This is a Brazilian Brigadeiro Cake.

– all-purpose flour – cocoa powder – baking soda – fine sea salt – granulated sugar – baking powder – large eggs – espresso powder

Add the sour cream, eggs, oil, coffee, and vanilla extract to a bowl and whisk until combined.

Sift together the flour, cocoa powder, baking powder, baking soda, salt, and espresso powder, if using. Set aside.

Add the sugar along with the dry ingredients. Whisk until incorporated, and a smooth batter is formed.

Pour the batter evenly onto baking pans. Bake in the pre-heated oven for 15-20 min.

Meanwhile, start making the brigadeiro by mixing the sweetened condensed milk, heavy cream, butter, and chocolate together.
