Chocolate Caramel Macarons

These Chocolate Caramel Macarons are one of my favorites that I have ever made! And I have made a LOT of them!

These macarons are filled with Chocolate Ganache and Caramel Filling, and they remind me of the Rolo® candies. Absolutely delicious.

Here what you'll need: Chocolate Macaron Shells – egg whites, about 3  – white sugar  – almond flour  – powdered sugar – cocoa powder – Food coloring a few drops of brown

Dark Chocolate Ganache – dark chocolate  – heavy cream  Caramel Filling – soft caramel candies  – heavy cream or more for consistency

Important Notes: Scale: Please use a scale when measuring the ingredients for accuracy. Baking time/temperature: Baking time and temperature will vary according to your own oven. Oven thermometer: Make absolute sure to have an oven thermometer to bake macarons. It’s one of the most important things about making macarons.

Tray rotation: Lots of bakers don’t have to rotate the trays 180 degrees in the oven every 5 minutes, but I do have to with my oven, or I will get lopsided macarons. Please adjust this according to your oven. Ganache: If you prefer, you can use milk chocolate, or semi-sweet.
