Carton Egg Whites Macarons

For this first time I decided to use 100% carton egg whites, without any cream of tartar, powdered egg whites, or additional fresh eggs.

INGREDIENTS

– egg whites (or fresh) – granulated sugar – almond flour – powdered sugar – Food coloring if using – unsalted butter – sweetened condensed milk  – vanilla bean paste

Place a bowl over a pan with barely simmering water, add the sugar and egg whites to the bowl.

Whisk the mixture until frothy and the sugar is completely melted. It will take a couple of minutes. You can test by touching the mixture between your fingers.

With the whisk attachment, start whisking mixture on low for about 30 seconds, then gradually start increasing speed to medium. Whisk until stiff peaks have formed.

Pour the sifted powdered sugar and almond flour into the stiff meringue. I made the batter into  3 different colors to make it fun. Start folding gently forming a letter J with a spatula.

To the first batter I added a touch of pink food coloring. Fold the batter until the perfect consistency is achieved.
