The cannoli filling is absolutely delicious, made just from ricotta, powdered sugar, vanilla beans, and vanilla. It's important to drain the ricotta through a cheesecloth before making the filling.
The frosting on top is a Ricotta Buttercream Frosting, made with butter, ricotta, powdered sugar, and vanilla. It's not overly sweet, and has a bit of tanginess and lightness from the ricotta cheese.
Top the cupcakes with mini cannoli made from scratch! But even if you don't make the cannoli from scratch, the cupcakes will still taste like cannoli in cupcake form.
