PIES AND TACOS
This is the perfect appetizer or side dish for you to enjoy with many!
Peel and slice plantains diagonally into ¼-inch pieces.
Toss with 1–2 tsp oil and a pinch of salt. For best results, season after roasting to avoid burning the spices.
Spread the slices into a single layer on your sheet pan and bake for 25 to 30 minutes, flipping them halfway through, until golden brown and lightly caramelized on the edges. They are ready when you can insert a fork with little resistance.
Once baked, sprinkle with ½ teaspoon each of smoked paprika, garlic powder, and optionally adobo seasoning, plus ¼ teaspoon chili powder—or adjust to your taste.
Mash 2 avocados in a bowl until slightly chunky. Stir in juice of 1 small lime, ¼ tsp salt, ¼ tsp chili powder, 1–2 tbsp chopped cilantro, 1 minced garlic clove, and a pinch of red pepper flakes. Optional: add minced red onion. Adjust lime and salt to taste.
Easy to prep and full of flavor, this combo is naturally gluten-free, dairy-free, and totally delicious.
