PIES AND TACOS
This Cilantro Lime Rice is a fresh and zesty side dish that pairs perfectly with a variety of meals.
Start by washing, rinsing, and draining the rice well to remove excess starch.
Heat olive oil or butter in a medium saucepan or pot over medium heat. If you like a garlicky kick, add minced fresh garlic and cook for about 30 seconds until fragrant.
Pour in the hot water and add salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid has been absorbed. Remove the saucepan from heat and let the rice sit, covered, for 5 minutes to steam and fluff up.
Add the chopped fresh cilantro, fresh lime juice, and cumin (if using) to the cooked rice. Gently toss to combine, fluffing with a fork to keep the grains separate. Adjust the seasoning with more salt or lime juice, if desired.
Serve warm as a side dish or a base for a chicken burrito bowl, ground beef taco bowl, or other meals. This recipe pairs amazing with black beans, onion, guacamole, salsa, pico de gallo, and many other Mexican sides/dishes!
